Players spit all the time. I think he was just looking at Cisse and then spat on auto-pilot without really thinking just as he went to walk away.
That's just the honest impression I get from the video.
It wasn't walking away though, Cisse had just stood on his ankle and had a little kick out, then Evans stared down at him with a face like thunder and spat.
I may be wrong, but it's just honestly the impression I get. He wasn't exactly foaming at the mouth with rage. He also didn't bother to even hide it, so he would have known he'd get caught immediately and face a lengthy ban if he did it intentionally.
To me, it just seems like he may have automatically spat as he walked away. Players do it dozens of times per game and perhaps he just wasn't thinking. It's not like this is a Newcastle player I'm desperately trying to find a way to defend. It's just the impression I got.
PS: The fact he's denying it is another factor. It's clear as day that he did spit and it's captured on video, so the only reason he would possibly defend it (unless he's really that stupid) is if there was no intention and it was just a moment without thinking.
