Also I'm terrible at shaving so I always end up with stray hairs that piss me off for the rest of the day <neg>

Very much this, I find the ones just to the side of the Adam's apple the worst for that. It always takes me a ridiculous amount of time as well. <neg>

Get a trimmer and let it catch up. Eventually, if you grow it out, it will thicken (ageing helps as well)

It's the clean up that takes me ages. Bloody ginger hair everywhere. I'm sure my trimmer was designed to fire hair at the floor/my eyes

I discovered Mt Etna on my face on Saturday and put off shaving until it was less noticeable.

I did think about just leaving a small unshaven patch around the offending protrusion but then I thought I'd look a bit daft.
